This week has been wild, first flooding then super cold temps. we are not normally running the heater until December, November at the earliest, but we have been this past week, which is just fine with me, I miss cold weather, and I like to make warm things for the cold. This was last Saturday morning, it was cold, my oldest was working at the soup kitchen, I love that he devotes his Saturday mornings there. Even though it requires hopping out of bed at 6:30 on a weekend. That chilly morning was great, quiet, You Tube yarny podcasts, I love Margaret Olander and there are so many! Coffee and a new project, it made for a peaceful morning.
Soup!
Need I say more? Its Fall, Its cold, Yarn, Coffee, Soup.
I made my Broccoli and Cheese Soup, but added potatoes and a carrot. It did change the flavor a bit but was still good.
Simple Recipe but here's what I did...
3 regular size cans of chicken broth
5 green onions chopped
1 carrot chopped small
3 potatoes diced
2 large broccoli crowns I used the florets not the stems,
some Velveeta (about 1/2 to 3/4 cup) to cream the broth enough to melt in
a cup of colby jack shredded cheese
and sea salt and pepper to taste. It was good too, and I didn't have to cook dinner the next day. Bonus!
